I use the 'Tropical' dried crickets for feeding my amphibians. Are nutrients lost in drying and to what extent?

There should be no problem if the animals having a varied diet, you can always get the specific powered calcium for sprinkling on reptiles/amphibians food, I use this on occasion. And I recommend our fresh keeping cricket feeding for your reptiles, since all nutrition are locked and nothing lost while processing. It’s the way most close to nature.

How big are these need some for Venus fly trap

In my experience these are much too large to feed to a Venus fly trap. I tired cutting them in half for this purpose, but that was minimally effective and hugely unpleasant.
